Children's Books and Carrot Cake

We celebrated Book Day today with a workshop on Children's Books. Here is a photo of Paddington Bear. You can guess why the author of the book called this delightful bear, Paddington!

Not very many of you managed to try my carrot cake, but those of you who did seemed to enjoy it!

Here is the recipe for carrot cake. Serves 8 people.

  • 150 ml sunflower oil
  • 250 g wholemeal flour
  • 2 tsp baking powder (you can add self-raising flour and forget about the baking powder)
  • 150 g brown sugar
  • 125 g carrots, grated
  • 1 large ripe banana, mashed
  • 2 eggs
  • 1 tbsp milk
Step 1
Beat the egg and sugar together in a large bowl.
Step 2
Mix the following ingredients, one at a time: oil, flour, carrots, banana and milk. Mix well until thoroughly blended.
Step 3
Turn into a greased cake tin (I usually put some margarine to grease the tin).
Step 4
Bake in a preheated oven at 150º for about 50 minutes until the cake is well risen, firm to the touch.
Step 4
Leave the cake to cool in the tin. Turn out on to a wire rack and leave to cool completely.
